If you’re like me you don’t have a big appetite during the hot and hazy days of summer. When that’s the case, I eat a lot of salad. I’ve come to really love kale salad. It’s very easy to make, it’s delicious and filling as well.
Here’s my version of a perfect kale protein salad:
1) Chopped kale
2) Cucumbers
3) Tomatoes
4) Caramelized onions or chopped red onions
5) Sliced avocado
6) Cranberries
7) Beans (black, chick peas or your favorite beans)
8) Salmon, tuna fish or fish of your choice
Mix the ingredients together and add your favorite protein topping and you have a delicious, nutritious and filling kale protein salad.
