This meal can be prepared anytime of day. If I get home from work late or I don’t feel like cooking a big meal I’ll just make a loaded egg white omelette. It’s full of protein and vegetables and is very satisfying.
Ingredients:
1) 2 egg whites
2) 1 cup of medley of diced green, yellow and red peppers
3) 1 tbsp. diced red onion
4) 1/2 cup of spinach
5) Mexican cheese blend (optional)
Mix peppers and onions together in a pan. Stir until light brown. Add egg whites, spinach and cheese. Cook until you reach desired consistency. Enjoy!
