Here is a great summer dish that is very easy to make and can be pretty healthy. They can serve as an appetizer or as the main course . Taco Friday’s have become a tradition in my family, started by my niece as a fun way to interact, get creative and share a meal.
Here’s what you need:
1) Soft or hard taco shells
2) Shredded chicken, beef (meatless meat), shrimp, fish
3) Lettuce
4) Guacamole
5) Sour cream or Greek yogurt
6) Hot sauce
7) Shredded cheese
8) Peppers
9) Onions (red or white)
Directions:
Heat oven to 325 degrees and wrap soft taco shells in foil and place in the oven for 10 minutes. If you’re in a rush you can microwave them for 30-45 seconds. For a healthier alternative you can use lettuce instead of taco shells. Season the meat or fish to your liking and prepare in the oven or stovetop.  Fill your taco with your favorite filler and garnish with peppers, onions, shredded cheese, guacamole and or yogurt.
Enjoy!
